Summer Honey Update

Spring Honey was golden with a delicate floral flavor no doubt contributed by the countless spring blooms from various flowers and trees including Black Locust.

Sumer honey is a combination of White Sweet Clover Honey and Basswood or Linden honey that has an almost fluorescent green hue accompanied by a hint of mint.

Comb Honey this year produced in a ross round super has turned out very well a light honey with beautiful full flavor a hint of mint from the basswood and subtle undertones of the Clovers. I find each spoon full each cell if you can individualize them has a unique flavor as the cells filled and the incoming nectar sources changed so does the honey.
