Pasteurized Honey by definition is honey that has been heated during processing to a temperature between 63C (145F) and 65.5C (150F) for 30 minutes this destroys sugar-tolerant yeasts and extends the shelf life prolonging the natural process of crystallization from occurring.

The term Raw honey implies the honey has never been heated past 110F (43.333C) This is the temperature at which pollen, propolis, antioxidants, and enzymes in the honey begin to deteriorate and reduces honeys natural health and healing benefits.

Unpasteurized Honey is both safe and legal for use and sale in Canada. Most commercial honey is pasteurized for ease of processing unless otherwise labeled. Hunzy Bear Honey is Raw & Unpasteurized to maximize flavor and quality. We do carefully heat our honey to liquify it for filling containers between harvests. We are careful not to heat the honey past 108F (42C) thus retaining all the benefits our Raw Unpasteurized Local Honey has to offer.
